MANGO AVOCADO DRESSING
Serves approximately 9
Serving size: 2 tablespoons
INGREDIENTS
1/2 cup mango, diced
1/4 avocado
1 tablespoon apple cider vinegar
1 tablespoon maple syrup or honey
Pinch of salt
Water
DIRECTIONS
Add all ingredients into a blender and blend until smooth, adding water until the dressing is the desired thickness. Use as a dressing for salad.
CARAMELIZED ONION SAUCE
Serves approximately 10
Serving size: 2 tablespoons
INGREDIENTS
3 tablespoons of olive oil, divided
2 onions (red or white), sliced
1/3 cup white wine
Water or chicken broth to deglaze
Salt and pepper
DIRECTIONS
- Add 1 tablespoon olive oil to a saucepan over medium heat. Add onions. Stir frequently until the onions slowly begin to brown. Caramelization is complete when the onions turn a dark brown; it may take up to 30 minutes. Deglaze the pan with the white wine and water or chicken broth. Add small amounts of liquid to deglaze (approximately 1/4 cup or less at a time).
- Place caramelized onions in a food processor or blender along with remaining olive oil, salt and pepper to taste. Blend ingredients and use as a sauce for many dishes — salads, pasta, toast spreads, etc.
